Summer Camping Recipe: Quinoa Veggie Salad!

If you haven’t tried quinoa in your summer camping recipes yet, what are you waiting for?! Quinoa (pronounced “KEEN-wa”) is a superfood that’s loaded with protein and packed with nutrients. And, you can easily adjust recipes to include flavors you like. Cook it the night before and refrigerate it with other ingredients to have a cool and tasty lunch ready the next day! At home or on the road, this is one recipe you won’t want to miss!

Camping Recipe

Summertime Quinoa Salad


  • 1 cup white quinoa, rinsed
  • 2 cups lightly packed baby spinach, rinsed and coarsely chopped
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ¼ cup cilantro, rinsed and coarsely chopped
  • Salt and pepper to taste

Additional add ins: black beans, corn, bell peppers (all colors!), and avocado!

Dressing – make separately:

  • ¼ cup lime juice
  • ¼ cup olive oil
  • 1 ½  tsp ground cumin
  • 1 ½ tsp Dijon mustard
  • 1 ½ tsp honey


  • Make the quinoa: using a fine mesh sieve, rinse the quinoa under cold running water. Cook the quinoa according to package directions. Remove from heat, keep covered, and let it stand for up to 15 minutes. Fluff it with a fork and stick it directly into the fridge.
  • Prepare all veggie add ins and set aside until ready to use.
  • For the dressing, combine all ingredients in a jar or bowl and whisk well, seasoning to taste with additional salt and pepper. Keep in fridge until ready to use.
  • When ready to assemble, combine quinoa and all veggie add-ins in a large bowl and mix well. Portion onto plates or into bowls and drizzle lightly with the dressing.
  • Tip: don’t add all of the dressing into the quinoa salad unless you plan to eat it all in one sitting, as the salad doesn’t mix well with the dressing overnight.  It’s better if you just drizzle the dressing as you need it.

This makes a delicious side dish to accompany grilled fish. Quinoa is a go-to favorite in many vegetarian and vegan recipes because it’s such an excellent source of protein. And this is a go-to recipe for us because it is so easy to make while traveling!
